Cuisine: Black Beans and Rice

Ingredients:
2 tablespoons olive oil
1 onion, finely diced
2-3 jalapenos, finely diced (seeds removed if less spiciness is desired)
5-7 cloves garlic
2 1/4 cups long-grain rice
2 cans black beans, drained
1 can diced tomatoes (no salt added variety; do not drain)
2 tablespoons Cajun Seasoning (I make my own, but any ol' Cajun seasoning will do)
2 teaspoons dried oregano
salt
pepper
3 cups water
parsley or cilantro

Directions:
In a saucepan, saute onion, jalapenos and garlic in olive oil for about 5 to 7 minutes. Add rice and stir. If needed, add a little more oil to ensure rice is completely coated. Add beans, tomatoes, Cajun seasoning, oregano, salt, pepper, and water. Stir to distribute all ingredients evenly in pot. Taste for saltiness. Add more salt or Cajun seasoning if needed.

Cover and bring pot to a boil. Reduce heat to a very low simmer. Simmer for about 20 minutes. Check once adding more water if needed. Remove from heat and set aside for about 10 minutes. Serve with chopped parsley or cilantro
