Cuisine: Fried Potatoes

You Will Need:
2 Tbsp. Fried Onion
½ Tbsp. Fried Garlic
½ Tbsp. fresh Cracked Pepper
3 Tbsp. Butter
3 Yellow Potatoes prepared in Jason’s Secret Style
this means you dice the potatoes, salt them, and let them sit and drain

What To Do:
Brown the butter. Add onion, garlic, pepper, and fry. Add potato and fry covered for 5 minutes. Stir, and reduce heat for 5 minutes. Fry covered for another 5 minutes and stir. Fry covered for another 2-5 minutes.

The Kitchenless Cook Tip:
This is a perfect recipe to make in an electric skillet. To make it even tastier and to make it a meal. First fry some bacon in the pan. Once cooked to its desired crispiness, remove and use the oil of the bacon instead of the butter for the potatoes. Cook potatoes as directed above. Remove, and then scramble some eggs.

Cuisine: Grandma’s Best Meat Loaf

Keep In Mind: You will need at least 3 hours to prepare this dish

You Will Need:
1/3 cup Chopped Onion
1/3 cup Chopped Sweet Red Pepper
1/3 cup Chopped Green Pepper
3 Tbsp. minced Fresh Parsley
3 minced Garlic Cloves
1 ¼ tsp. dried Sage
1 ¼ tsp. Salt
1 tsp. Pepper
2 lbs. Ground Beef
¾ cup Milk
2 Eggs, beaten
¼ cup Worcestershire Sauce
2/3 cup Bread Crumbs
4 Bacon Strips

For The Sauce, You Will Need:
¼ cup chopped Canned Tomatoes
¼ cup Ketchup
2 Tbsp. Brown Sugar
1 tsp. Salt
1 tsp. Ground Mustard
½ tsp. Pepper

What To Do:
In a large bowl, combine the first 9 ingredients. Add beef and mix well. Combine milk, eggs, and Worcestershire sauce and mix this into the beef mixture. Add crumbs.Grease a large sheet of foil, and place bacon on the foil. Mold the meat mixture into a loaf and place over the bacon.

Refrigerate for 2 hours or overnight.

Bake at 350 degrees for 1 hour. Open foil and drain the juices. Combine sauce ingredients and spoon over the loaf. Bake uncovered for 30 minutes or until no pink remains.

Cuisine: Orangy Orange Chicken

You Will Need:
3 Chicken thighs, diced
1 small Onion, diced
3 cloves Garlic, minced
the Zest from 1/3 of an Orange
Salt (to taste)
2 tsp. Sugar
Cayenne Pepper (to taste)
Belizian Seasoning Mix (to taste)
The Juice of one Orange, separated half and half
A dash of Pepper

What To Do:
Mix chicken, zest, salt, sugar, cayenne, Belizian mix, and ½ orange juice and set aside. Heat oil in a pan. Add onions and saute on medium heat for about 2 minutes. Add garlic and sautee two more minutes. Turn heat to high and add chicken. Saute stirring regularly until chicken is cooked and turn off heat. Pour in remaining orange juice, and sprinkle in salt and pepper. Serve with rice and green beans, or other desired vegetables.

The Kitchenless Cook Tips:
This dish is very easy to make in an electric skillet or wok. Make the rice in a rice cooker, and you have a very healthy and tasty meal!

Cuisine: Beef Stew

Keep In Mind: You Will Need 5 Hours to Complete this Dish!

What You Need:
3 lbs. Stew Meat (no need to brown meat)
5 Potatoes, cubed
3 Carrots, cubed
1-2 Onion
3 Stalks Celery
1 Tbsp. Tapioca
1 large (48 oz) can Tomato Juice
5 slices of bread

What To Do:
Put all ingredients in a roaster. Lay sliced bread on top. Cover and bake at 250 degrees for 5 hours.

Cuisine: Cheese & Vegetable Chowder

You Will Need:
3 strips of Bacon
1 cup chopped onion
2 cans Chicken Broth
3 cups potatoes, cubed and scrubbed
1 cup Diced Carrots
1 can (15 oz) Whole-Kernel Corn, drained
1 box (10 oz) Frozen Chopped Kale (or Spinach)
4 cups Lowfat Milk
¼ cup & 2 Tbsp. All Purpose Flour
¾ Tbsp. Salt
6 oz Cheddar Cheese, Shredded (1 ½ cups)

What To Do:
Cook bacon in a 5 qt. pot over medium heat until crisp, drain on a paper towel, and then crumble. Discard all but 2 tsp. of fat from the pot. Saute onion in fat over medium heat 4 to 5 minutes, stirring often, until tender. Stir in the broth, potatoes, carrots, corn, and kale. Bring to a boil, reduce heat, cover, and stir often to break up the frozen kale. Simmer 15 minutes or until vegetables are tender.

Whisk milk, flour, and salt in a medium sized bowl until blended and then stir the mixture into the pot. Bring to a gentle boil, stirring occasionally and cook 3 minutes or until slightly thickened. Add cheese, and stir until melted.

Ladle into soup plates/bowls. Sprinkle with bacon and garnish with scallions.

Cuisine: Jason’s Spicy Southwest Seasoning!!

You Will Need:
2 Tbsp. Fried Red Onion
1 Tbsp. Black Peppercorns
1½ Tbsp. Fried Garlic
1 tsp. Crushed Red Pepper
1 tsp. Cumin Seed
1 Tbsp. Oregano Leaves
2 tsp. Hot Paprika
½ tsp. Ginger Powder
1 tsp. Sweet Paprika
1 tsp. Smoked Chipotle
1 tsp. Chaat Masala

What To Do:
Put the fried onion, peppercorns, fried garlic, red pepper, cumin seed, and oregano leaves in a spice grinder.Process until the mixture is a fine powder. Combine all ingredients. Voila!

Use on anything that needs a Kick! Keep stored in an air tight container.

Cuisine: Sweet Cheese Pound Cake

You Will Need:
1 – 15 oz. container of Ricotta Cheese
1.2 cup Sour Cream
½ cup Milk
3 Eggs
1 tsp. Vanilla
½ cup Sugar
1 cup Corn Flour
1 cup Cake Flour
2 tsp. Baking Powder
1 tsp. Salt
2 sticks Butter, melted
Toasted Sesame Seeds

What To Do:
Strain ricotta cheese through a cheese cloth for 2 hours (or more. Mix honey, sour cream, milk, ricotta cheese, eggs, butter, sugar and vanilla together. Triple Sift (YES, you read correctly…Triple) the corn flour, cake flour, baking powder and salt together. Pour milky cheese-egg mixture into the flour mixture. Pour batter into two prepared bread pans and bake at 350degrees for about 55 minutes or until you can insert a toothpick into the middle, and pull the toothpick out clean.

Cuisine: A Midwestern Casserole

You Will Need:
4 Boneless Chicken Breast Halves, Cooked & Cubed
1 Can Tomatoes w/ Green Chiles
1 Can Cream of Mushroom Soup
1 Can Cream of Chicken Soup
1 Taco Sauce 4oz. (or change it up: substitute jerk chicken sauce)
½ cup Chicken Broth
1 package Tortilla Chips (or Doritos)
½ to ¾ cups of Grated Cheese

What You Do:
In a sauce pan, combine and heat tomatoes, soups, taco sauce and broth. Line the bottom of the casserole dish with taco chips. Add mixture of chicken/sauce. Top with grated cheese and bake at 350degrees until bubbly and hot.

Other Cool Options:
Add beans, chiles, or sautéed onions to the equation!
